What is Sima?
Fermented Lemon Soda
Sima is a low-alcohol, naturally fizzy beverage traditionally enjoyed in Finland during Vappu (May Day).
Itโs considered a type of mead, though itโs much lighter and quicker to ferment than traditional honey-based meads 1 2 3.

Ingredients
- Lemons (juice and peel)
- Sugar (white, brown, or honey)
- Water
- Yeast (fresh or dried)
- Raisins (added to bottles to indicate fermentation readiness)
How Itโs Made:
Boil lemon juice, peels, and sugar in water.
Cool the mixture and add yeast.
Ferment for 1โ2 days at room temperature.
Bottle with a few raisins in each bottle.
Refrigerate for 2โ3 days. When the raisins float, itโs ready to drink!
